Woven throughout this Ukrainian recipe book are heartwarming stories of Jennie Choban’s fascinating life. She was only a young child when she and her family fled Ukraine in 1944, dodging bombs and Communists trekking through Romania, Hungary and Austria.

Kapusta or Cabbage is much more than a cookbook. It’s a Mother and Daughter Historical and Culinary Journey. The poignant and funny stories span 4 generations with healthy, delicious recipes from Europe to Canada.

Get tips and techniques for making the best Ukrainian recipes including: cabbage rolls, cabbage soup, sauerkraut, borscht, kielbasa recipes and many fascinating recipes and innovative ways to cook with cabbage, cornmeal and beets.

Woven throughout this book are tales of a young girl’s life in war-torn Europe, as she and her family are forced by the Bolsheviks to flee their homeland in the Steppes of Ukraine across the Carpathian mountains and into Displaced Persons (DP) camp in Nazi Germany, near the Black Forest, where they settled until the end of World War II.

Later, after a harrowing sea journey across the Atlantic to freedom we find Jennie and her family settled safe in Lachine, Quebec, Canada where Jennie finds out what it’s like to be Canadian while still holding onto her family’s Ukrainian roots.

Recipes included in this book are tried and true, authentic Ukrainian family recipes, such as: Cabbage rolls, cabbage soup, borscht (Ukrainian beet soup), sauerkraut, fried cabbage, gnocchi, and other delicious classic recipes.

Daughter April-Ria, a professionally trained chef, also includes mouthwatering recipes such as: boeuf burgundy, lemon and ginger rice soup, chicken a la crème, Moroccan lamb medallions, saffron rice and many more.
