This cookbook is a compilation of ketogenic/Paleo recipes I developed in my own ketogenic diet journey. The hardest part for me when I began adapting to a ketogenic diet was, not giving up the sweets so much, but giving up the traditional Deep South dishes that I was used to. Over time, I have adapted many of my favorite Southern dishes to be ketogenic/Paleo, and the funny thing is, many of them taste better with the adaptations than the originals did. I find that cauliflower rice really soaks up the flavors of the dish and in the case of dishes like Dirty Rice and Jambalaya, the cauliflower rice version has so much more flavor than the rice versions. Almond flour is more difficult to make into a roux than regular white flour (it burns quickly), but once you succeed, it imparts a wonderful nuttiness to the roux dishes such as the Gumbos and the Etoufee.
